Coffee Pie Supreme


Ingredients:
  • 1 tablespoon unflavored gelatin
  • 1/4 cup of cold water
  • 3 eggs separated
  • 1 cup refined sugar
  • 1 cup of cold strong coffee
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 baked pie shell
Procedure:
  1. Dissolve gelatin in water for 5 minutes.
  2. Beat egg yolks until light: beat in 1/2 cup sugar gradually, add coffee slowly, then salt.
  3. Cook over boiling water for 5 minutes, stirring constantly.
  4. Add gelatin and stir until dissolved.
  5. Chill until mixture begins to thicken.
  6. Beat egg whites until stiff; beat in remaining sugar gradually and cold vanilla.
  7. Fold into gelatin mixture.
  8. Pour into pie shell and chill firm.
  9. Cover with whipped cream topping.
*Makes 1 (9-inch) delicious pie.
